ManilaQ's Bagwang.

When Mecielo and I went to Mercato two Sundays ago and tried Bagwang, it became an instant favorite. It was love at first bite! Super crispy and utterly delicious! I crave for this moan-inducing slices of deep-fried pork almost everyday. I'm probably going to Mercato over the weekend just for this. And oh, for some Lollicakes, too!

Use of pork jowls instead of ordinary liempo. Lines of fat underline interchangeably with lean meat making it more manageable for marination process.

Marinated with ManilaQ's secret blend of spices instead of just plain salt.

Tenderized via high pressure cookers instead of just plain pan boiling.

Prepared with ManilaQ's secret process which provides the meat with "Crisp Retention Property' while keeping its savoury taste.

Bagwang is served with egg and rice over at Mercato. A perfect meal for shameless carnivores like me. LOL. I consider it a comfort food since it reminds me so much of Mom's lechon kawali (or pisik-pisik, as we call it at home). :)
